Salisbury steak is an easy ground beef patty, similar to hamburger steak, but closer to a meatloaf, in that it usually includes bread crumbs, onions, and eggs. It is always served with brown gravy and topped over mashed potatoes. To make a low-carb Salisbury steak, we just need to swap out the filling ingredients for the patty as well as the gravy to make it keto-friendly.

What Is Glucomannan Powder?

You’ll notice for my gravy I opted to use glucomannan powder. If it’s an unfamiliar ingredient to you, let me explain why it’s such a great option for a warm, thick keto gravy. Glucomannan is a natural, water soluble, dietary fiber made from the root of the konjac plant. This fiber is the same ingredient used to make Miracle noodles or Shiritayaki noodles. It’s been used for a very long time in Japanese cooking as a thickener.

Before I discovered it, I was using xanthan gum as a thickener for my gravy, but it gets somewhat goopy and a bit to gel-like. Once I made the switch to glucomannan for gravy, I will never go back! It’s definitely a must in my keto kitchen!

Keto Salisbury Steak with Onion Gravy

Tender Keto Salisbury Steak with Onion gravy served over creamy mashed cauliflower is a low carb comfort meal any night of the week!

Ingredients

  • 2 pounds ground beef
  • 1 egg beaten
  • 1/2 cup pork rinds finely ground
  • 1/4 cup parsley fresh
  • 1/4 cup heavy cream
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tbsp dried onion flakes
  • 1 tsp salt
  • 1/4 tsp pepper

Onion Gravy

  • 2 tbsp avocado oil
  • 1 tbsp butter
  • 1 cup onion sliced
  • 2 tbsp Worcestershire sauce
  • 2 cups beef bone broth
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp glucomannan powder

Instructions

Make the Steaks

  1. Preheat the oven to 400 degrees.

  2. Combine all the steak ingredients in a bowl and mix to combine. Form into 6 large patties and place on a baking sheet pan.

  3. Bake for 20 minutes.

Make the Gravy

  1. Place the avocado oil and butter in a medium sized skillet and heat over medium heat.

  2. Add the sliced onions and cook until soft and slightly browned.

  3. Pour in the Worcestershire sauce and bone broth and bring to a simmer. Add salt and pepper then taste and adjust if needed.

  4. Sprinkle in Glucomannan powder and continue to simmer on low heat and stir until gravy thickens, about 5 minutes. If it’s not thick enough for your liking, simply sprinkle in another 1/4 teaspoon and allow to simmer on low until it thickens.

  5. Serve gravy over each steak on top of mashed cauliflower if desired.
